Identification of Bacteriocinogenic Lactic Acid Bacteria Isolated from Philippine Fermented Foods through 16S rRNA Gene Sequence Analysis

Abstract


The identities of bacteriocinogenic lactic acid bacteria isolated from Philippines fermented rice and fish mixture and fermented rice cake were found to be Pediococcus acidilactici and Enterrococcus faecium, respectively, through 16S rRNA gene sequencing and homology search from the NCBI database using the BLAST program. The spectra of antimicrobial activity of pH-beutralized, cell-free culture broth of the bacteriocinogenic isolates were also elucidated.
